Brussels sprouts are rich in vitamin C, a good source of folate, vitamin E and beta-carotene, and also contain iron.
Nothing beats using your own fresh produce or materials around the house. If you’re missing a thing or two, tick the items you need to add to your shopping list.
What to do
Wash and halve the Brussels sprouts, and chop the almonds.
Heat oil in a large pan. Add the Brussels sprouts, spreading them evenly in the pan so all are touching the heat. Cook on a low heat until tender and brown on one side, then flip. Add more oil as needed.
Continue to cook Brussels sprouts on a low heat. Add chopped almonds and raisins and toss.
Take off the heat. Add fresh herbs and diced apple.
