Brussels sprouts are rich in vitamin C, a good source of folate, vitamin E and beta-carotene, and also contain iron.

What to do

    1. Wash and halve the Brussels sprouts, and chop the almonds.

    2. Heat oil in a large pan. Add the Brussels sprouts, spreading them evenly in the pan so all are touching the heat. Cook on a low heat until tender and brown on one side, then flip. Add more oil as needed.

    3. Continue to cook Brussels sprouts on a low heat. Add chopped almonds and raisins and toss.

    4. Take off the heat. Add fresh herbs and diced apple.

    5. Serve warm.
