Nothing beats using your own fresh produce or materials around the house. If you’re missing a thing or two, tick the items you need to add to your shopping list.
2 teaspoons curry powder
1 tablespoon whole egg mayonnaise
8 slices of bread (choose wholegrain for lower GI and more fibre)
Shell hard boiled eggs, place into a bowl and smash with a fork.
Add curry powder and mayonnaise and stir until combined.
Spread mixture onto four slices of bread. Add lettuce and place the remaining four slices of bread on top.
