What to do
1. To make the beetroot hummus, blend all ingredients until smooth. Do the same to make the guacamole. Set aside.
2. Cook brown rice as per packet instructions.
3. Fill bowl with cooked brown rice and spinach leaves.
4. Top with all toppings including a dollop of beetroot hummus and guacamole.
5. Drizzle with fresh lemon juice, salt and pepper if desired.
