Pie devotees: get your pie fix faster than you can preheat the oven. The boosters ramp up the nutrition without altering taste, and the cashews add a rich, buttery pastry flavour. Soak those nuts for a creamy shake reminiscent of that perfect bite à la mode.
3⁄4 cup (180 ml) unsweetened almond milk (strained if homemade)
1 3⁄4 cups (475 g) unsweetened applesauce or stewed apples
1 cup (140 g) raw unsalted cashews, soaked (see page 6)
2 teaspoons natural vanilla extract, plus more to taste
3⁄4 teaspoon ground cinnamon, plus more to taste
2 chopped, pitted, and soaked dates (see page 6), or 1 tablespoon pure maple syrup, plus more to taste
1 cup (125 g) ice cubes
1 tablespoon lucuma powder
1 cup (43g) firmly packed baby spinach
1⁄2 cup (60g) frozen raw cauliflower florets
1. Throw all of the ingredients (except the ice cubes) into your blender and blast on high for 30 to 60 seconds, until smooth and creamy.
2. Add the ice cubes and blast for 10 to 20 seconds more, until well combined. Tweak flavours to taste (you may want to add more vanilla, cinnamon, or sweetener).
