Ingredients

Nothing beats using your own fresh produce or materials around the house.
If you’re missing a thing or two, tick the items you need to add to your shopping list.
  • Beetroot hummus
  • Guacamole
  • What to do

  • 1. To make the beetroot hummus, blend all ingredients until smooth. Do the same to make the guacamole. Set aside.

  • 2. Cook brown rice as per packet instructions.

  • 3. Fill bowl with cooked brown rice and spinach leaves.

  • 4. Top with all toppings including a dollop of beetroot hummus and guacamole.

  • 5. Drizzle with fresh lemon juice, salt and pepper if desired.
