What to do
Combine EasiYo yogurt with garlic, lemon zest and salt.
Place a sieve over a bowl and line the inside with a generous piece of muslin or cheese cloth. Pour the yogurt mixture into the lined sieve and secure the cloth around to make a ball, twisting the top to extract the liquid (whey). Leave overnight or longer, squeezing and twisting occasionally. The longer it drains the firmer the cheese will be.
Remove the muslin or kitchen dish cloth and garnish the labneh with olive oil and fresh thyme. Season with salt and pepper.
Serve on bagels with smoked salmon, micro greens and capers.
