Cypriot Salad - forkin vegan

Ingredients

Nothing beats using your own fresh produce or materials around the house.
If you’re missing a thing or two, tick the items you need to add to your shopping list.

What to do

  • 1. Cook freekeh and lentils separately

  • 2. Drain well and allow to cool

  • 3. In a large bowl place all ingredients (except pomegranate), mix well and season to taste

  • 4. Place in a serving dish and top with pomegranate

  • Tip: Feel free to adjust quantities to suit your taste!
