Dot’s Koeksisters (South African Doughnut) recipe

These South African doughnuts are traditionally eaten on a Sunday morning. One day a week just doesn’t seem enough!

  • Serves: 3-4 dozen

In my South African culture and community koeksisters are synonymous with Sunday mornings and although one can eat them at any time, we feel that a Sunday without koeksisters is not Sunday. Although a favourite on Sunday mornings, they are also a welcome addition to any morning or afternoon tea.

Ingredients

  • Ingredients for dough

What to do

  • Instructions for making the dough

    1. Peel 1 medium sized potato and cut into cubes. Boil until soft (45-60 minutes). Once soft discard excess water and mash with a potato masher, set aside for now.

    2. Mix 250ml of luke warm water with 1 packet of instant yeast. Cover with cling wrap and set aside for 45-60 minutes.

    3. Once your potatoes are done and yeast has been set aside for desired 45-60 minutes mix all the dry ingredients together in a bowl.

    4. Add butter and 1 beaten egg. Add mashed potato. Add yeast and water mixture and mix until dough is all combined and is a soft sticky dough.

    5. Rub your hands with cooking oil and knead dough for 5 minutes.
