In my South African culture and community koeksisters are synonymous with Sunday mornings and although one can eat them at any time, we feel that a Sunday without koeksisters is not Sunday. Although a favourite on Sunday mornings, they are also a welcome addition to any morning or afternoon tea.
Instructions for making the dough
Peel 1 medium sized potato and cut into cubes. Boil until soft (45-60 minutes). Once soft discard excess water and mash with a potato masher, set aside for now.
Mix 250ml of luke warm water with 1 packet of instant yeast. Cover with cling wrap and set aside for 45-60 minutes.
Once your potatoes are done and yeast has been set aside for desired 45-60 minutes mix all the dry ingredients together in a bowl.
Add butter and 1 beaten egg. Add mashed potato. Add yeast and water mixture and mix until dough is all combined and is a soft sticky dough.
Rub your hands with cooking oil and knead dough for 5 minutes.
Instructions for making the syrup
Put the sugar, water, cinnamon stick and cardamom in a pot and boil on low – medium heat for about 10-15 minutes.
Do not stir the syrup but rather swirl it as this will cause it to crystallize.
Once the syrup is thick add 5-6 koeksisters to the syrup and boil on either side for 3 minutes. Then remove them and sprinkle with coconut and serve.
