Baked fish rice paper rolls (Cá Nướng Cuốn Bánh Tráng)

This recipe is special to me as it’s one of my mum and dad’s signature dishes that I grew up eating and loving (their addition of makrut lime leaves is what makes the fish so fragrant). They still cook this dish to this day, but I now cook this at home for my own family and have also made it for so many friends and dinner parties over the years. I cooked this dish once for 15 people in my house with two 4 kilogram barramundis and it was an absolute hit! Still one of my favourite dinners I’ve hosted in my home.

What makes it so special is while it looks impressive to have a large whole fish on the table, which always sparks excitement and conversation when it’s being brought out, it’s actually really quick to prepare the fish and ingredients. It’s all about placing everything on the table and having your guests assemble the rice paper rolls themselves. It’s such a great dish for gatherings because it's interactive and everyone gets involved. There’s someone wetting the rice paper sheets, someone deboning the fish, plates of herbs and vermicelli noodles are passed across the table. Everyone is wrapping, rolling and enjoying themselves!
