One pot salmon recipe

A simple and delicious dinner, with the goodness of fish and colourful veggies.

Ingredients

What to do

    1. Pre-heat oven to 200°C.

    2. Place the potatoes, beetroot, garlic, rosemary and 1 tablespoon of olive oil into an ovenproof casserole dish and roast for 30 minutes until starting to brown.

    3. Toss the asparagus into the casserole dish, broccolini, tomatoes and lemons to pot, and nestle the salmon amongst the vegetables. Return to the oven for 10-15 minutes until the salmon is cooked.

    4. Remove from oven and drizzle with the remaining oil and garnish with basil leaves.
