What to do
1. Grate potatoes on the fine side of your grater and drain for 10 minutes in a colander placed over a pot. Spoon into a large bowl.
2. Grate the onion and add to the bowl, followed by the starch from the pot and two eggs. Mix well.
3. Heat oil in a heavy-bottomed pan and spoon out pancake dough until it’s about 1cm thick or less. Turn after 2-3 minutes or until pancakes are golden on both sides and serve warm.
