Fast food gets a health kick with these tasty, cleaner alternatives.

Vegetarian lasagne

Traditional lasagne is delicious but the white cheese and beef version packs a calorie hit. Swap pasta sheets for layers of veggies and use ricotta as a béchamel replacement in this lighter alternative.

To make:

Roast the veggies for your filling – great options include capsicum, squash and pumpkin. Slice up zucchini and eggplant and add a layer to your baking dish. Pour over some fresh tomato pasta sauce, roasted veggies and crumble some fresh reduced-fat ricotta. Add another layer of eggplant and zucchini and repeat until your vegetables are used up. Top with ricotta, fresh basil and a light sprinkle of low fat mozzarella and bake.

Nutty chicken schnitzel

Lower the carb content of traditional crumbed schnitzel and boost the nutrients with this alternative crust. Serve with steamed greens and you will enjoy the taste even more.

To make:

Flour your chicken breast in seasoned wholemeal flour. Lightly dip in a beaten egg and crumb with a blended mixture of pumpkin and sunflower seeds, white sesame seeds and almond meal for a crunchy, nuttier flavor. Shallow fry in vegetable oil and drain on paper towel. Ditch the cheese and sauce of a traditional parma and serve instead with a crisp leafy salad, steamed broccoli and fresh cut lemon.

Chip-free nachos

These healthy nachos include the winning combo of sauce, cheese and avocado but pack in extra veggies, some clever substitutions and a tasty corn chip alternative.

To make:

Swap the corn chips for some toasted torn up mountain bread or pita. Top with kidney beans, avocado mashed with coriander and fresh lime, diced ripe tomatoes, sliced capsicum, extra light cheese – grate it yourself on a very fine setting so you use less – and bake. Top with a scoop of non-fat Greek yogurt instead of sour cream.

Alternative french fries

Choose baked over fried or mix up the ingredients for a cleaner version of those hard to pass up hot chips.

To make:

Coat sliced potatoes or sweet potatoes with a little olive oil, sea salt and bake until crispy. Use parsnips as an alternative or try baking eggplant fries and serving with a lemon yoghurt dressing.
