    13 weekend breakfast ideas

    Savour those lazy weekend mornings with these nourishing, comforting breakfast ideas.

    1. Smoked salmon and asparagus omelette

    Pan-fry freshly chopped asparagus in olive oil until slightly softened, pour in eggs whisked with a dash of low fat milk, sprinkle in salt and pepper and top with torn smoked salmon. Once the egg mixture begins to cook on the bottom – flip!

    2. Homemade muesli bars

    Combine two cups rolled oats, ½ cup LSA, two eggs, dried cranberries and pumpkin seeds with ¼ cup coconut oil and honey. Mix well and spoon into a lined tin and bake until golden.

    3. Weekend shakshuka

    Pan-fry an onion and clove of garlic in olive oil before adding chopped red peppers and stir until fragrant. Pour two tins of chopped tomatoes and add spices – cumin, paprika, dash of cayenne pepper, pinch of sugar and salt and pepper. Once reduced, crack eggs evenly over the top and cover, until cooked to your liking. Top with fresh parsley and serve with toasted Turkish bread.

    4. Banana and wheatgerm smoothie

    Combine two bananas, one cup of low fat milk, half cup of low fat yoghurt, two tablespoons of wheatgerm, a dash of cinnamon and two tablespoons of honey. Blitz and pour.

    5. Toasted wraps with scrambled egg, spicy salsa and wilted spinach

    The easiest of breakfasts! Simply layer scrambled eggs, chopped tomatoes, a pinch of chili powder and a handful of spinach over wholemeal tortillas. Fold to make a burrito and toast in a sandwich press.

    6. Ham, tomato and spinach egg cups

    These clever egg cups are so simple to make and they keep well in the fridge for easy weekday snacks. Grease and fill a muffin tray with finely sliced leg ham, drop a cherry tomato and some spinach leaves inside, crack an egg over the top and garnish with a sprig of parsley. Bake until the eggs have set. Want a vegetarian alternative? Slice the top off a truss tomato and scoop out the insides, crack an egg into the tomato and put a few asparagus tips in, sprinkle with herbs, bake for 20 mins and serve with toast and avocado.     7. Poached pears and plums with cinnamon and yoghurt

    Place peeled whole pears in a saucepan with cinnamon and water and poach for around 8 minutes. Add halved plums and continue until softened. Once cooled, top with a good dollop of vanilla yoghurt and a handful of slivered almonds.

    8. Home-made baked beans on toast

    Add some chopped onion to a saucepan with a dash of olive oil and cook until softened. Pour in two tins of tomatoes, two tins of drained cannellini beans, a tablespoon of brown sugar, a good dash of hot paprika, a tablespoon of Worcestershire sauce and a teaspoon of Dijon mustard. Once simmering, reduce the heat and cook for 40 minutes. Serve on wholemeal bread with wilted spinach and a soft-boiled egg.

    9. Wholemeal pancakes with berries

    Use the end of summer’s berries over these easy pancakes. Swap regular self-raising flour for wholemeal and add a dash of cinnamon, brown sugar, milk and an egg. Whisk together and use a splash of oil in the pan to cook the pancakes. Top with fresh berries and a spoonful of cinnamon yoghurt.

    10. Zesty avocado toast

    Let avocado shine in this simple, tasty breakfast. Cut thick slices of dense, seeded bread and toast well. Spread generously with ripe avocado, add a squeeze of lemon, a dash of salt and pepper and a light sprinkling of chili flakes.

    11. Porridge with bananas and walnuts

    As the weather cools, porridge is a delightful way to embrace the brisker weekends. Combine oats, milk and a dash of salt and once it begins to warm up, add chopped banana, cinnamon, honey and a handful of walnuts.

    12. Classic jaffle

    Don’t overcomplicate an absolute pearler. A good bitey cheddar, a quick spread of mustard, sliced tomato and some freshly shaved leg ham on thick sourdough. The ultimate jaffle.

    13. Warm breakfast salad

    Heap wilted kale, sliced avocado, chopped tomatoes and crumbled low fat feta in a bowl and top with a soft-poached egg.
