Spicy and comforting Moroccan baked eggs from the Gewürzhaus spice masters.
3 tablespoons of virgin olive oil
1 onion sliced
2 gloves of garlic
1 small red chilli
1 teaspoon of cumin
1 teaspoon of ras el hanout
1 teaspoon of paprika
1 teaspoon of salt
2 tomatoes, diced
2 tablespoons of chopped coriander
1. Heat the oil in a small tagine or frying pan. Cook the onions until soft and add garlic, chili, spices, coriander and tomatoes. Leave to cook for 10 – 15 minutes.
2. Make two indentations with a spoon in the frying pan and gently crack the eggs over the mixture. Cook until the eggs are set and serve with crusty bread.
