Peach salsa recipe
Zesty summer fruits and cooling cucumber make a delicious, versatile mix.
2 yellow peaches, stone removed, diced, skin on
2 Lebanese cucumbers, diced
1 large red capsicum, diced
Juice of 1 lime
1 tbsp fresh coriander, finely chopped
1. Mix peaches, cucumber and capsicum together in a large bowl.
2. Squeeze the lime juice onto the salad and add coriander.
