Curried egg sandwich recipe

A simple, protein-rich lunch that always hits the spot.

Serves: 4

Cooking time: 12 minutes

Ingredients

4 eggs

2 teaspoons curry powder

1 tablespoon whole egg mayonnaise

Lettuce

8 slices of bread (choose wholegrain for lower GI and more fibre)

Method

1. Shell hard boiled eggs, place into a bowl and smash with a fork.

2. Add curry powder and mayonnaise and stir until combined.

3. Spread mixture onto four slices of bread. Add lettuce and place the remaining four slices of bread on top.
